Maybis Hotel Hosts a “Phakakrong – Traditional Thai Dessert Workshop”

Maybis Hotel invites you to experience the charm of rare traditional Thai desserts through our special workshop: “Phakakrong Dessert Making.”
Also known by some as Chor Phakakrong, this exquisite Thai dessert is celebrated for its delicate appearance and smooth, refined taste.

The recipe was creatively developed by Ajarn Samret Wannapirun, who elevated the traditional Chor Kaew dessert by crafting ultra-thin, layered petals that resemble real phakakrong flowers. This unique technique not only enhances the dessert’s beauty but has also become its signature identity that continues to this day.

  • Filling:
  • Made with smooth, gently sweetened mashed soybeans, giving a delicate flavor similar to the filling of Look Chup. The filling can also be customized to your preference, such as red bean paste, Thong Yod, or other sweet fillings.
  • Outer Dough:
  • Prepared from wheat flour mixed with coconut milk, cooked until thickened, then kneaded until soft and smooth before wrapping around the filling.
  • Pleating Technique:
  • Brass tweezers are used to create intricate pleats similar to the craftsmanship of making Chor Muang without using any molds. Each piece is entirely handmade, requiring precision, skill, and great attention to detail.
  • In this workshop, Chef Bean (Patcharaporn Poonpol), Executive Chef at Maybis Hotel, will guide you closely through every step with care, ensuring that you can confidently make Phakakrong from start to finish, including:
  1. Prepare the filling – Cook mashed soybeans with sugar and coconut milk until thick and well combined. Set aside to cool.
  2. Make the dough – Cook wheat flour with coconut milk until fully done, then knead until smooth.
  3. Wrap the filling – Shape the filling into small balls and cover completely with the dough.
  4. Create the pattern – Use brass tweezers to pinch the dough into layered patterns around the entire piece, resembling the petals of a phakakrong flower. The dessert is now ready to serve.

This delicate Thai dessert is therefore perfect as a gift for someone special on various occasions such as birthdays, anniversaries, and other meaningful celebrations. It is also commonly presented as an auspicious Thai dessert at weddings, receptions, merit-making ceremonies, and festive events.
